Cookery in the region is hearty. There is the famous pâté de foie gras from Brieve-la-Gaillarde and, of course, the famous Limousin Beef. Beef, lamb and pork are a large feature of the Limousin. For example, 'Cote be Boeuf Limousin à la moelle et au vin de Cahors', is a recipe which uses a dark purple Cahors wine which Henry IV liked to drink. Mushrooms and ceps from the region's forests are considered by many to be the best quality in the world. Chestnut, walnut and apple orchards abound, all the fruits being transformed into hors d'oeuvres, entrées, desserts, wines and aperitifs. Other traditional foods include cabbage braised with chestnuts and clafoutis, a creamy cherry flan. Chestnuts were once the staple of farmers' diets and now garnish turkey, goose veal or pork stews and also as a puree with venison.

Walking There are several hiking trails in the area. Ramblers can also enjoy some of the 1800 km of bridleways and footpaths in the Haute Vienne. Part of the long-distance route GR4 crosses the department on its journey from the Atlantic coast to the Mediterranean. Other walks range from 8 km to 25 km. The Monts d'Ambazac and the Monts de Blond both have marked routes enabling the visitor to fully explore and enjoy the varied countryside in which they are situated, as do the many lakes, such as Lac de Vassiviere (see below) with its islands criss-crossed by a network of footpaths and nature trails leading to outdoor sculptures of local granite and wood.
Lakes and lakeside amenities The Haute Vienne has eight lakes offering various amenities. The second-largest of these, Lac St Pardoux is just a short drive away where you will find bathing, windsurfing, sailing, fishing, cycle hire, footpaths, and riding on 330 hectares of grounds. On and around Lac St Pardoux there are many activities to enjoy. Around the lake there are paths for rambles and mountain biking, tennis, beach-volley ball, horse riding, French style bowls (pétanque) and numerous other sporting activities to take part in and enjoy. On the lake are numerous creeks and protected beaches, many water sports activities which include: sailing, windsurfing, water skiing canoeing, kayaking and an aqua centre. Fishing is also available on the lake and also in nearby rivers and private fisheries.
